What cannot be missing from the table of the majority of the population living in the Brazilian Amazon is cassava flour. Consumption is considered high in relation to the rest of the country. And in many places in the region it is the main source of income. Farmers plant cassava and then, after harvest, produce its derivatives such as: flour, gum and tucupi. Producers and workers in family farming in the city of Baião, in the state of Pará, are examples. The products bring employment and income to those who depend on the farm. The work with the flour begins with grinding the cassava, and shortly after it goes through other processes to remove its derivatives.
