Amazonian cuisine has been winning over Brazil and the world. And pirarucu is a fish that is much appreciated in restaurants and especially by the riverside dwellers, most of whom make their living from fishing. The dish featured in the video is called "Pirarucu Ribeirinho", in homage to the people of the forest. It was produced by a chef from a hotel in Manaus, who will be representing Amazonas at a gastronomic event in the city of São Paulo, Brazil. The novelty surrounding the pirarucu is that commercial establishments in the capital of Amazonas that subscribe to the purchase of sustainably managed fish will receive the fish every month. This year alone, the project has already brought in more than R$100,000 for the riverside communities of the Mamirauá reserve, in the interior of Amazonas. The ingredients of the dish are marinated pirarucu, tucupi velouté, jambu, coconut vinaigrette and tapioca pururuca.
